Gochujang Carrot Salad

Carrots are one of the vegetables I always have on hand. Because of that, I use them a lot. This salad is one of my go-to side dishes, crunchy with a little heat and sweet spice warmth.

Ingredients

Dressing

7g (1.5 t) ginger, grated

2 garlic cloves, grated

1.5 T gochujang

1 T soy sauce

1 T maple syrup or honey

1 T rice vinegar

2 t sesame oil

0.50 t gochugaru – optional

0.25 t ground black pepper

0.25 t kosher salt

Pinch of ground cinnamon

Salad Vegetables

568g (1.25 lb) carrots, julienned

40g (4) scallions, sliced 

Recipe Know-how

1.      In a large bowl, combine all of the dressing ingredients.

  • Add the carrots and scallions. Tossing to coat.

  • Taste for seasoning, adjusting as necessary.

  • Refrigerate at least 1 hour.

2.      Serve.
