Spicy Pork Stir Fry - Dwaegogi bokkeum

Spicy slices of pork to accompany another main dish or add ssam and make it a meal on its own.

Spicy Pork Stir Fry

Serves 4-6

A simple interactive meal with lots of textures and flavor combinations.

Recipe Tips:

1. I like to serve this pork with ssam or lettuce wraps along with rice, lettuces, perilla leaves and kimchi. The pork is equally delicious tossed through noodles.

2. If kept in long slices, the pork can be grilled however, it should be turned frequently so that the marinade does not burn. Cook pork on the grill for 15 minutes. Cut the cooked pork strips into smaller pieces and mix into onions sauteed or grilled separately.

Ingredients

685g (1.5 lbs) pork belly, sliced .25 in thick and into 1-1.5 in lengths

400g (1.5 large) onion, sliced .25 in thick with the grain

Marinade

10g (2 t) ginger, minced

12 garlic cloves, minced

3 T gochugaru

2.5 T soy sauce

2 T mirin

1 T gochujang

1 T maesil or honey

1 T sugar

4 t fish sauce

2 t vinegar, rice or apple cider

.50 t black pepper

.50 t kosher salt

Finishing

3 scallions, sliced

2 t sesame oil

1 t sesame seeds

Recipe Know-how

1.      In a large bowl, combine marinade ingredients.

  • Add pork to marinade. Allow to marinate 2 hours to overnight.

2.      Heat a large non-stick saute pan over medium high heat. Add 1 t. vegetable oil.

  • Add pork. Cook 10 minutes stirring frequently.

  • Add onions. Cook 6-8 minutes longer or until the onions are beginning to soften and any liquid evaporates some,

If the pork begins to cook too quickly at any time, reduce heat slightly to avoid burning.

  • Add 50% scallions. Cook 30 seconds

3.      Pour onto a serving dish. Drizzle with sesame oil, and sprinkle with scallions and sesame seeds.

4.      Serve.
