Tender crisp onions in a sweet and spicy sauce perfect for topping hotdogs and sausages.

Hotdog Onions

Makes about 2 c (enough for - 10 hotdogs)

I’ve probably said it before but, I went to culinary school and after training professionally, I graduated with a deep appreciation for the simplicity of hotdogs and hamburgers. So much so that I would say they are among my favorite foods anytime of year but particularly in summer. I don’t want something fancy just a simply grilled good quality hamburger with a little steak seasoning on a bun with a slice of American cheese from the deli counter and ketchup for super basic and tomato, mayo and grilled onions for something fancy. The same goes hotdogs, I like them the be good quality and simply grilled on a potato bun with kraut and deli mustard and I’m a happy camper. However, if I’m looking to make my hotdog special, these hotdog onions are my go to. They come together quickly with the sweet and spicy topping making the perfect compliment to smoky hotdogs and sausages. Inspired by the onions you can get at a hotdog cart in New York City, these are a bit more elevated with more texture and loads more flavor.

*1. Alternatively use 2 t Asian mustard mixed with 1.5 t soju,
 

Ingredients

15ml (1 T) vegetable oil

645g (2 large) onions, sliced 0.25in thick with the grain

3 garlic cloves, julienned

40g (2 T) gochujang

160g (0.50 c) ketchup

3g (1 t) chili powder

3g (1 t) paprika

1g (0.25 t) kosher salt

*15g (1 T) spicy deli mustard

1g (0.25 t) ground cinnamon

36ml (3 T) water

Hot sauce, to taste

Method

1.      Heat a medium saute pan over medium-high heat.

  • Add the oil and heat for 30 seconds.

  • Add the onions and a pinch of salt.

  • Saute for 2 – 3 minutes or until the onions just begin to wilt.

  • Add the gochujang and saute for 1.5 minutes longer.

  • Add the remaining ingredients stirring well to combine and bring to a boil.

  • Reduce to a low simmer and cook uncovered stirring occassionally for 3 – 5 minutes.

  • Taste and adjust the seasoning as desired.

2.      Serve on a hotdog or ssausage.
